Croat Recipes

Each region of Croatia has its own distinct flavors and influences, and for this region Croatian food is sometimes referred to as "the cuisine of regions". Some popular Croatian dishes include:
  • Brudet - Fish stew, served with polenta (boiled cornmeal)

  • Cešnovka - A garlic-flavored spicy pork sausage from the Turopolje region.

  • Ðuvec - Stewed vegetables, similar to ratatouille.

  • Gulaš - A spicy beef stew, similar to Hungarian cuisine's gulyás (goulash).

  • Kulen - Another variety of spicy pork sausage. Kulen is originally from Slavonia.

  • Istrian stew (Croatian: Istarska jota) - A garlic-flavored stew made with bacon, spare ribs, beans, potato and sauerkraut.

  • Juha od Mahuna - A green bean soup with carrots, lentils, onions and peas.

  • Pašticada (sometimes known as "Dalmatinska pašticada") - A beef stew served with gnocchi (dumplings) or wide noodles.

  • Sarma - Sauerkraut rolls containing ground (minced) pork and rice.

    Sarma

  • Sataraš - Bell peppers and other vegetables, minced and roasted.

  • Slavonski Cobanac - Lamb stew originally from Slavonia.

  • Zagrebacki odrezak - Thin slices of chicken or veal stuffed with ham and cheese and then sautéed. As the name suggests, this dish is originally from Croatia's capital, Zagreb.
Here are some Croatian desserts:
  • Cupavci - A biscuit-like cake cut into small cubes which are covered with chocolate and dessicated coconut.

  • Krafne - A type of doughnut (without a hole), filled with cream, custard, chocolate or jelly (jam).

  • Palacinke - Crêpes with sweet fillings.

  • Rožata - A custard pudding, similar to flan.

  • Strudel (Croatian: Savijaca, Strudla) - The Croatian version of strudel, filled with apple or cheese.

  • Strukli - A type of ravioli, originally from Zagreb. Traditionally, strukli was eaten at Christmas, but is now eaten all year round. Strukli may be filled with either apple or cheese and is often eat with compote of dried fruit (pear, apples or prunes).

Product Description:
Charting the culinary history and traditions of the lands that once belonged to the Venetian Republic; part culinary journey, part cookbook, this gorgeous book is informed by the cultural heritage of Italian chef Nino Zoccali and his Greek wife.

The food of the Venetian Republic is diverse:

  • Prosecco & snapper risotto
  • Croatian roast lamb shoulder with olive oil potatoes
  • Sweet & sour red mullet of Crete
  • Zabaglione from Corfu
  • Dubrovnik's ricotta & rose liqueur crepes

These are recipes steeped in history; dishes from the days when Venice was a world power. How did this small city state rule the waters of the Mediterranean, enjoying unrivaled wealth and prestige? How could this serene, safe-haven city of canals come to play a defining role in shaping the cuisine, culture, and architecture of her Mediterranean neighbors? Yet, for a thousand years, the ships and merchants of the Republic dominated salt, silk, and spice trade routes.

To tell this story, respected writer and restaurateur Nino Zoccali focuses on the four key regions that geographically encapsulate the Venetian Republic, each of which has its own distinct cuisine: Venice and its lagoon islands; the Veneto, of which Venice is the capital; the Croatian coast and the Greek Islands formerly under Venetian rule. The 80 dishes he has selected all have strong traditional Venetian roots or influence, celebrating ingredients and techniques that show how, to this day, food in this magnificent region continues to be influenced by neighboring cultures.

Stunning food and location photography from around Venice, the Dalmatian Coast, and Greek Islands make this cookbook a must-have for foodies and lovers of Mediterranean cuisine.

Product Description:
The photo-monograph National Geographic-Croatia from Above is Croatia's first photo-monograph sponsored by National Geographic, the most prestigious global brand in photography. This lavish edition contains 200 photographs printed in 18.9'' x 12.6'' (48 cm x 32 cm) format. Created during a seven-year exploration of Croatia from an aerial perspective, these photographs portray familiar natural and cultural attractions in a hitherto unseen way, and unveil new sites of value that had been lying hidden until now. The photographs have been beautifully arranged in a carefully planned layout in order to best showcase and celebrate Croatia's great wealth and diversity. Each photograph is accompanied by a text describing the geologic, historic, economic, ecological, and cultural aspects of Croatia captured in that image. Collectively, they paint a unique portrait of Croatia, depicting its position in the broader context of space and time. The book is further enriched with texts written by Davor Rostuhar, author, photographer, and project leader; by Hrvoje Prćić, Editor-in-Chief of National Geographic Croatia; and Dr. Ivo Josipović, President of the Republic of Croatia. Two editions, one in English and one in Croatian, were published by the Club for Expedition and Culture in June 2014.
